The summer kicked off with the birth of some babies we are all excited about. A friend of mine has baby kittens. One of which will be coming home to us very soon... Stay tuned for Arie's story! And Momma bird had some babies outside of our kitchen window!
We spent a few days doing some car shopping and I got a new Jeep I am in love with :)
We have taken a few time outs from reality and done some random driving through the mountains... LOVE the random road trips!
As of June we have been out boating every weekend all weekend! Trying to make the most of boating season this year. The water has been a little cold but Karley has been loving the water! We have a hard time keeping her in the boat!
The kids and I also set up a dog wash for the dogs in the back yard. They all needed the baths! That was a lot of fun... Even the dogs enjoyed it!
One of my favorite parts of summer is the food and the grilling. Tad's cooking in the kitchen may be a little questionable but there is no mistaking how delicious his grilling skills are!
And then of course there is my absolute favorite summer time dishes of all.... Macaroni salad and potato salad! The macaroni salad I make has been apart of my life for as long as I can remember. It is something I look forward to every time I make it :) The potato salad, however, is a new recipe I will share with you all. It's pretty easy to make and a offers a different twist on an all American summer classic!
Ingredients:
4 cups cubed red potatos
1 cup chopped onion
5 bacon strips, cooked and crumbled
2 Tablespoons parsley
1 and 1/3 cups of mayo
3 Tablespoons grated parmesan cheese
3 Tablespoons prepared ranch dressing
2 Tablespoons prepared mustard
4 teaspoons white vinegar
1/2 teaspoon minced garlic
1/4 teaspoon salt
1/4 teaspoon pepper
Directions:
Place potatoes in a large sauce pan, cover with water and boil til tender. Drain.
In a large bowl combine potatoes, bacon and parsley. In a smaller bowl mix the rest of the ingredients. Pour over the potato mixture and toss to coat. Refrigerate for an hour before serving.
**** The sauce mixture makes a lot. I use about 3/4's of it on my salad and I use a little bit more than 4 cups of potatoes**** Enjoy!
We have lots of things going on it seems like! The kids and I joined a Summer movie club out in Salt Lake and have been venturing out every Wednesday for a movie and lunch.
We have been busy with Baseball. I have been so proud of Peyton this season. He really has worked hard at it and has found that he loves the Catcher position!
Tad and I proceeded to party with Big Dawg Daddy, Toby Keith!
As for the rest of the summer... we will see what the cards have in store for us but I am hoping it will be as great as the start of the season!
